  • 1 3/4 lb boneless, skinless chicken breast (cut into 1 1/4-inch cubes)
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers (diced)
  • 1 large red onion (diced)
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided, plus more for brushing grill)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together the marinade ingredients: ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 Tbsp), rice vinegar, minced garlic, minced ginger, sesame oil, salt, and pepper.
  2. Place the chicken in a resealable bag and pour in most of the marinade (reserve 1/2 cup). Seal and refrigerate for at least one hour.
  3. Preheat the grill to medium heat (400°F). Toss the onion and peppers in olive oil; season with salt and pepper.
  4. Thread the marinated chicken pieces, pineapple cubes, onion chunks, and pepper onto soaked wooden skewers.
  5. Grill skewers for about five minutes on each side while basting with reserved marinade until chicken reaches an internal temperature of 165°F.
