  • 1/3 cup sour cream
  • 2 pounds beef brisket or boneless chuck roast
  • 8 ounces mushrooms
  • 4 carrots
  • 1 large onion
  • 2 cups beef broth
  • Fresh thyme
  • Garlic

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the pie crust by combining flour and diced cold butter in a mixing bowl; mix until crumbly. Stir in sour cream, form into a ball, wrap, and chill for at least 30 minutes.
  3. In a skillet, heat oil over medium-high heat. Brown the beef pieces; set aside. Sauté onions, carrots, mushrooms, garlic, thyme, salt, and pepper until fragrant. Add flour and tomato paste.
  4. Return beef to the skillet; add beef broth and brown sugar. Simmer on low for about 90 minutes until tender.
