  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil, then sauté the chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon (about 5-6 minutes).
  4. Stir in diced tomatoes, Italian herbs, salt, and black pepper; simmer for about 3-4 minutes.
  5. In the prepared baking dish, layer half of the sliced zucchini followed by half of the turkey mixture and half of the mozzarella cheese. Repeat this layering process.
  6. Bake uncovered for 30-35 minutes until bubbly and cheese is golden. Let cool for 5 minutes before serving.
