  • 1 pound lean ground beef

  • 1/2 teaspoon black pepper
  • 1 (28-ounce) can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Slice zucchini into rounds and sprinkle with salt. Let sit for 15 minutes, then rinse and pat dry.
  2. In a skillet over medium-high heat, heat olive oil. Sauté onion until softened; add garlic and ground beef, cooking until browned.
  3. Stir in diced tomatoes and seasonings. Remove from heat.
  4. In an 8×8 baking dish, layer half of the meat mixture, half the zucchini, and half the cheese. Repeat layers.
