  • 2 ears corn (sliced into 1-inch disks)
  • 2 chicken or turkey cajun style sausage links (sliced)
  • 1 lb large raw shrimp (peeled and deveined)
  • 6 Tbsp butter (diced)
  • 2 Tbsp fresh lemon juice
  • 2 tsp chopped fresh thyme
  • 2 cloves garlic (minced)
  • 2 tsp Old Bay seasoning
  • Fresh parsley leaves for garnish

Instructions

  1. Preheat grill to medium-high heat (425°F).
  2. Microwave potatoes for about 3 minutes until slightly tender, then slice.
  3. In four double-lined foil sheets, layer potato slices, corn disks, sliced sausage, and shrimp.
  4. In a microwave-safe dish, melt butter; mix in lemon juice, thyme, and garlic. Drizzle over each packet.
  5. Sprinkle Old Bay seasoning on top.
  6. Seal packets tightly and place sealed side up on the grill.
  7. Cook for 12-15 minutes or until shrimp are pink and potatoes are tender.
