- 1.5 lbs salmon fillets (cut into 1-inch squares)
- 2 large lemons (thinly sliced)
- 2 Tbsp parsley (freshly chopped)
- 2 or 3 garlic cloves (pressed)
- 1/2 Tbsp Dijon mustard
- 1/2 tsp salt
- 1/8 tsp ground black pepper
- 2 Tbsp light olive oil
- 2 Tbsp fresh lemon juice
- Soak bamboo skewers in water for at least an hour to prevent burning.
- Preheat the grill to medium heat (about 375°F).
- In a bowl, mix parsley, garlic, Dijon mustard, salt, black pepper, olive oil, and lemon juice until well combined.
- Fold lemon slices and skewer alternating pieces of salmon and lemon onto two skewers.
- Brush the skewers generously with the marinade on both sides.
- Oil the grill grates and carefully place the skewers on the hot grill.
- Grill for about 3-4 minutes per side or until cooked through.
