  • 1.5 lbs salmon fillets (cut into 1-inch squares)
  • 2 large lemons (thinly sliced)
  • 2 Tbsp parsley (freshly chopped)
  • 2 or 3 garlic cloves (pressed)
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least an hour to prevent burning.
  2. Preheat the grill to medium heat (about 375°F).
  3. In a bowl, mix parsley, garlic, Dijon mustard, salt, black pepper, olive oil, and lemon juice until well combined.
  4. Fold lemon slices and skewer alternating pieces of salmon and lemon onto two skewers.
  5. Brush the skewers generously with the marinade on both sides.
  6. Oil the grill grates and carefully place the skewers on the hot grill.
  7. Grill for about 3-4 minutes per side or until cooked through.
