  • 4 pounds boneless skinless chicken thighs (or chicken breasts)
  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic
  • Sliced green onions (for garnish)

Instructions

  1. Prepare the marinade by whisking together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic in a medium mixing bowl.
  2. Reserve 1 cup of marinade for basting later, then add the remaining marinade to a ziplock bag with the chicken. Seal and refrigerate for at least 3 hours or overnight.
  3. Preheat your grill to medium heat. Remove chicken from marinade and place on the grill.
  4. Grill each side for 6-8 minutes until the internal temperature reaches 165°F. Baste with reserved marinade during the last few minutes.
  5. Garnish with sliced green onions before serving.
