  • 4 boneless chicken thigh fillets (skin removed)
  • 3 tablespoons olive oil
  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (washed and dried)
  • 2 avocados (sliced)
  • 1 pinch cilantro (extra to garnish)
  • 1 pinch sour cream (optional – to serve)

Instructions

  1. Prepare the marinade by whisking olive oil, lime juice, chopped cilantro, crushed garlic, brown sugar, red chili flakes, ground cumin, and salt together.
  2. Marinate the chicken thighs in half of the mixture for at least two hours. Reserve the remainder for drizzling later.
  3. Grill the marinated chicken on medium-high heat until golden brown and cooked through (5-7 minutes per side). Set aside to rest.
  4. Sauté sliced bell peppers and onions in a little olive oil until tender (3-5 minutes).
  5. Slice the grilled chicken and assemble your salad by layering Romaine lettuce, avocado slices, grilled veggies, and chicken strips. Drizzle with reserved marinade before serving.
