  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 pinch salt

  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • 2 ears sweet corn (grilled)
  • 1 medium avocado (sliced)
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper (diced)
  • ½ medium red onion (diced)
  • 1 cup grape tomatoes (halved)
  • 2 medium jalapenos (sliced)
  • 1 handful fresh cilantro (for garnish)

Instructions

  1. Cook rice according to package instructions, then fluff with a fork and stir in lime juice and cilantro.
  2. In a mixing bowl, whisk olive oil, chili powder, salt, black pepper, garlic powder, and oregano. Add chicken strips and marinate for at least 15 minutes.
  3. Grill the marinated chicken over medium-high heat for 6-7 minutes per side until fully cooked. Let rest before slicing.
  4. Grill corn until charred; slice kernels off the cob. Prepare vegetables: dice bell pepper and onion, halve tomatoes, and slice jalapeños.
  5. Assemble bowls by layering rice first, followed by grilled chicken, corn, diced vegetables, avocado slices, salsa, and sour cream.
