  • 450 g chicken breast, cubed
  • 200 g mushrooms, sliced
  • 1 red bell pepper, diced
  • 600 g baby potatoes, halved
  • 4 tbsp olive oil (divided)
  • 2 cloves garlic, minced
  • Garlic powder
  • Dried oregano
  • Italian herbs
  • Paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200C (400F).
  2. Toss halved baby potatoes with 2 tbsp olive oil, garlic powder, oregano, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until golden.
  3. In a skillet over medium-high heat, add 2 tbsp olive oil and chicken cubes seasoned with salt, pepper, paprika, and Italian herbs. Cook until golden brown (about 5–7 minutes).
  4. Stir in minced garlic, sliced mushrooms, and diced red bell pepper. Cook for another 5–6 minutes until veggies are tender.
  5. Serve the chicken garnished with fresh parsley alongside crispy roasted potatoes.
