  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 1/4 cup chicken broth or water
  • 1 tbsp fresh lemon juice
  • Seasonings: salt, black pepper, red pepper flakes (optional)

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and mincing the garlic. Rinse the broccoli and spinach.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and sauté until golden brown (6-8 minutes). Remove and set aside.
  3. In the same skillet, add another tablespoon of olive oil and toss in the broccoli. Cook for about 3-4 minutes until starting to soften.
  4. Reduce heat to medium and add minced garlic and spinach to the skillet with broccoli. Stir until spinach wilts (about 2 minutes).
  5. Return chicken to the skillet, pour in chicken broth or water, stir to combine, and let simmer for 2-3 minutes.
  6. Drizzle with lemon juice before serving.
