  • 3 medium potatoes (peeled & cubed)
  • 1012 medium shrimp (peeled & deveined)
  • 1 cup broccoli florets
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 green bell pepper (diced)
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • 2 tsp olive oil
  • Salt & black pepper (to taste)

Instructions

  1. For the mashed potatoes, boil the cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet, heat 1 tsp olive oil over medium heat. Sauté broccoli and bell peppers for about 4-5 minutes until tender yet vibrant. Season with salt and pepper.
  3. In another skillet, melt remaining butter with 1 tsp olive oil over medium heat. Sauté garlic for 30 seconds before adding shrimp, paprika, salt, and pepper. Cook shrimp for 2-3 minutes per side until pink and slightly golden.
  4. Assemble by placing mashed potatoes on one side of the plate and arranging shrimp and veggies on the other.
