  • 1 lb chicken breasts (skinless, boneless, sliced)
  • 1/2 teaspoon smoked paprika (or more)
  • 1/2 teaspoon chili powder (or more)
  • 1/4 teaspoon salt (or to taste)
  • black pepper (freshly ground, to taste)
  • 2 zucchini (medium, sliced)
  • 1.5 cups corn kernels (cooked, about 3 corn ears – corn on the cob)
  • 5 cloves garlic (minced)
  • 2 tablespoons freshly squeezed lime juice (or more)
  • 4 tablespoons butter (divided)
  • 1/2 cup fresh cilantro (chopped)

Instructions

  1. Slice the chicken breasts into thin pieces and chop the zucchini into rounds.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Add the chicken to the skillet and season with smoked paprika, chili powder, salt, and pepper. Sear for 5-7 minutes until golden brown.
  4. Push the chicken to one side of the pan, add minced garlic and zucchini to the other side, cooking for another 3-4 minutes until tender.
  5. Stir in cooked corn kernels and add 3 tablespoons of butter to melt over everything. Drizzle with lime juice.
  6. Remove from heat and garnish with chopped cilantro before serving warm.
