  • 12 tablespoons (170g) unsalted butter, softened (1 ½ sticks), divided
  • 1/2 cup (100g) brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 cup (200g) granulated sugar
  • 2 teaspoons lime zest or lemon zest
  • 1 teaspoon vanilla extract
  • 2 large eggs, separated
  • 1 ½ cups (195g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt
  • 1/2 cup (125g) sour cream or plain yogurt

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Prepare fresh pineapple by peeling and slicing.
  3. Grease an 8-inch or 9-inch cake pan with butter and sprinkle brown sugar and cinnamon.
