  • 1 cup crumbled feta cheese (150g)
  • ½ cup strained Greek yogurt (90g)
  • 1 medium spring onion (20g)
  • ½ cup grated Gruyere cheese (40g)
  • Zest of ½ lemon
  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon olive oil (+ extra for drizzling)
  • ⅓ teaspoon dried oregano (+ extra for sprinkling)

Instructions

  1. Preheat your oven to 200°C / 390°F.
  2. Wash zucchinis and cut each in half lengthwise. Scoop out some flesh to create space for stuffing.
  3. In a mixing bowl, combine crumbled feta, strained Greek yogurt, chopped spring onion, grated Gruyere, lemon zest, garlic powder, parsley, olive oil, and oregano. Mix until well combined.
  4. Generously fill each zucchini half with the stuffing mixture. Drizzle with olive oil and sprinkle with additional oregano if desired.
  5. Place stuffed zucchinis in a baking dish and bake for about 45 minutes or until tender and golden on top.
