  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans diced tomatoes with green chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a Dutch oven or large soup pot over medium-high heat. Sauté chopped onion until translucent (about 5 minutes).
  2. Add ground turkey to the pot and cook, breaking it apart until browned (about 5 minutes).
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper. Mix well.
  4. Add drained kidney beans, diced tomatoes with juices, and chicken broth; bring to a gentle boil.
  5. Reduce heat to low and simmer for 15-20 minutes with the lid slightly ajar, stirring occasionally.
