12 ounces chicken breakfast links
2 cans (15 oz each) great northern beans, drained
1 can (15 oz) whole corn kernels, drained
1 can (4 oz) diced green chilies
1 can (10 oz) diced tomatoes with green chilies
1 can (15 oz) pure pumpkin puree
4 cups chicken stock
8 ounces plain cream cheese
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1 teaspoon ground nutmeg
1/2 teaspoon ground black pepper
Instructions
In a skillet over medium heat, remove casings from the chicken breakfast links and crumble them. Cook until browned and fully cooked, about 8-10 minutes. Drain excess fat.
In your crockpot, combine the cooked sausage with great northern beans, corn kernels, diced green chilies, diced tomatoes, pumpkin puree, chicken stock, and spices. Stir until well mixed.
Cover and cook on low for 6-8 hours.
About 20-30 minutes before serving, add cream cheese cut into chunks to the crockpot. Stir occasionally until melted.
