  • 1 large sweet onion, chopped
  • 34 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans, drained
  • 7 ounces chopped green chiles (mild or hot)
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 8 ounces cream cheese, cubed

Instructions

  1. Sauté onions in melted butter over medium heat until translucent. Add garlic and cook for another minute.
  2. Stir in cumin and oregano to combine with the aromatics.
  3. Add chicken breasts, cannellini beans, green chiles, corn, and chicken broth. Bring to a boil then reduce heat to simmer covered for 20 minutes.
  4. Remove cooked chicken and shred using two forks; return to the pot.
  5. Gradually add cream cheese cubes until melted and blended into the chili.
