  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place cut side down on a baking sheet and roast for about 30-35 minutes until tender.
  4. In a skillet over medium heat, add olive oil and sauté diced onion until translucent. Add garlic and mushrooms; cook until browned.
  5. Stir in fresh spinach until wilted, then remove from heat.
  6. In a mixing bowl, combine softened cream cheese, Parmesan cheese, nutmeg, and the cooked vegetable mixture. Season to taste.
  7. Scrape the roasted squash flesh into strands using a fork and mix with the filling until well combined.
  8. Spoon the filling back into each squash half and top with shredded mozzarella cheese.
  9. Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
