  • 2 pounds zucchini (cut into 1/4-inch slices)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)

Instructions

  1. Preheat oven to 425˚F and butter a baking dish.
  2. Salt the zucchini slices and let them rest for 15 minutes to draw out moisture; then wipe clean with paper towels.
  3. Arrange zucchini in the baking dish evenly.
  4. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half of the parmesan cheese.
  5. Sauté garlic in butter until fragrant; mix in the cream mixture until it starts to bubble.
  6. Stir in half of the mozzarella until melted.
  7. Pour sauce over zucchini and top with remaining cheeses.
  8. Bake for 18-22 minutes until golden brown.
  9. Let cool for 5-10 minutes before serving.
