  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 4 cloves garlic (2 chopped, 2 minced)
  • 1 tsp Italian herb blend
  • Salt & pepper
  • Olive oil (for frying)
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped (for topping)

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, Italian herb blend, salt, and pepper. Mix well and shape into small meatballs.
  2. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove from skillet and set aside.
  3. In the same skillet, add more olive oil and sauté onion, red bell pepper, yellow bell pepper, and minced garlic until softened.
  4. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; season with salt and pepper.
  5. Return meatballs to the skillet with the sauce and simmer for about 10–12 minutes until cooked through.
  6. Serve hot with fresh parsley sprinkled on top.
