  • 1 cup softened butter
  • 8 oz softened cream cheese
  • 1 ½ cups sugar
  • 1 ½ tsp vanilla extract
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9" x 5" loaf pans.
  2. In a bowl, toss blueberries with 2 Tbsp flour; set aside.
  3. In a large mixing bowl, beat together softened butter, cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk remaining flour with baking powder and salt. Gradually add to the wet mixture until just combined.
  5. Fold in the floured blueberries gently using a rubber spatula.
  6. Pour batter into prepared pans and bake for about 45 minutes or until a toothpick comes out clean.
  7. Allow to cool on a wire rack for at least 10 minutes before slicing.
