  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream
  • Additional chopped Oreo cookies, to garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a mixing bowl, beat softened butter and sugar until fluffy. Add egg whites one at a time, mixing well, then stir in vanilla.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, alternating with the milk until just combined.
  4. Fold in chopped Oreo cookies. Divide batter between pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. Allow cakes to cool before layering: place one layer on a plate, spread half of the softened ice cream over it, then top with the second layer.
  6. Frost with whipped cream and garnish with additional chopped cookies. Chill for at least an hour before serving.
