  • 1 1/4 cup all purpose flour, spooned and leveled
  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel by mixing flour, brown sugar, cinnamon, and salt with softened butter; refrigerate.
  2. Preheat oven to 400°F (200°C) and line baking sheets.
  3. In a bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt; set aside.
  4. Cream cold butter with brown sugar and granulated sugar until smooth.
  5. Add egg, egg yolk, and vanilla; blend well.
  6. Gradually mix in dry ingredients until just combined.
  7. Shape into balls and create indents; fill with streusel before baking for 8-11 minutes.
  8. Cool and drizzle with icing made from powdered sugar, cream (or milk), vanilla, and salt.
