Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (plus extra for coating)
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped nuts (optional)
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • Extra cinnamon for rolling
  • Powdered sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Stir in the vanilla extract.
  3. In another bowl, whisk together the flour, ground cinnamon, and salt. Gradually add this mixture to the wet ingredients until just combined.
  4. If using nuts, fold them into the dough gently.
  5. Scoop out 1-inch balls of dough and place them on the prepared baking sheet, spacing them about an inch apart.
  6. Bake for 10-12 minutes or until the bottoms are golden brown. Avoid overbaking!
  7. While warm, roll each cookie in a mixture of powdered sugar and cinnamon. Allow to cool completely before rolling again for an extra snowy finish.
