  • 1/4 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp apple cider reduction
  • 2 tsp cornstarch
  • 2 tsp water
  • 1/2 cup melted unsalted brown butter
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour (or all-purpose flour)
  • 1 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup apple cider reduction
  • 4 oz cream cheese, at room temperature
  • 1 cup unsalted brown butter, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 2 tbsp apple cider reduction (plus extra if desired)

  • Cinnamon sticks

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Simmer apple cider in a saucepan until reduced by half; allow cooling.
  3. Sauté diced apples with butter and spices until tender; set aside.
  4. Mix dry ingredients in one bowl and combine melted brown butter, sugars, eggs, and vanilla in another.
  5. Gradually mix dry ingredients into the wet mixture along with cooled apple cider; fold in sautéed apples.
  6. Pour batter into muffin tins and bake for 20-25 minutes until a toothpick comes out clean.
  7. Cool completely before frosting with cream cheese frosting made from cream cheese, brown butter, powdered sugar, cinnamon, vanilla extract, and apple cider reduction.
