  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

  1. Preheat your oven to 350°F and grease a 9-by-5-inch loaf pan.

  3. In a large bowl, mix eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.

  5. Pour batter into the prepared pan and top with remaining chocolate chips.
  6. Bake for 50-60 minutes until a toothpick inserted comes out mostly clean.
