  • 1 lb (500g) shrimp (peeled and deveined, tail-on)
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro leaves (or parsley leaves, chopped finely)
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic (chopped finely)
  • 1/2 tablespoon honey
  • 1 pinch salt

Instructions

  1. Soak bamboo skewers in cold water for about 20 minutes.
  2. Rinse the shrimp under cold water and pat dry.
  3. In a mixing bowl, whisk together lime juice, olive oil, cilantro, Thai sweet chili sauce, garlic, honey, and salt until smooth.
  4. Add the shrimp to the marinade and toss gently to coat evenly.
  5. Allow shrimp to marinate for at least 30 minutes.
  6. Preheat your grill over medium-high heat.
  7. Thread the marinated shrimp onto soaked bamboo skewers.
  8. Grill shrimp for about 2-3 minutes on each side until fully cooked and slightly charred.
  9. Serve immediately.
