- 1 lb (500g) shrimp (peeled and deveined, tail-on)
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon fresh cilantro leaves (or parsley leaves, chopped finely)
- 2 tablespoons Thai sweet chili sauce
- 2 cloves garlic (chopped finely)
- 1/2 tablespoon honey
- 1 pinch salt
- Soak bamboo skewers in cold water for about 20 minutes.
- Rinse the shrimp under cold water and pat dry.
- In a mixing bowl, whisk together lime juice, olive oil, cilantro, Thai sweet chili sauce, garlic, honey, and salt until smooth.
- Add the shrimp to the marinade and toss gently to coat evenly.
- Allow shrimp to marinate for at least 30 minutes.
- Preheat your grill over medium-high heat.
- Thread the marinated shrimp onto soaked bamboo skewers.
- Grill shrimp for about 2-3 minutes on each side until fully cooked and slightly charred.
