  • 1 cup pure pumpkin
  • 1 ½ pounds chicken breasts
  • One 10-ounce bag frozen butternut squash or sweet potatoes
  • For dumplings: flour
  • baking powder
  • pumpkin pie spice
  • 1 large egg
  • milk

Instructions

  1. In a Dutch oven over medium heat, melt the butter and sauté carrots, celery, and onion until softened.
  2. Dust with flour, stir well, then gradually add chicken broth while scraping any brown bits from the pot.
  3. Add garlic, pumpkin puree, cumin, and pumpkin pie spice; bring to a boil.
  4. Reduce heat and poach chicken breasts until fully cooked; shred once cooled.
  5. Prepare dumpling dough by combining dry ingredients and mixing in wet ingredients gently.
  6. Return shredded chicken to the pot along with the vegetables and dumplings shaped into tablespoon-sized portions.
  7. Cover and simmer until dumplings are puffy; finish with lemon juice before serving.
