  • 12 ounces jumbo pasta shells
  • 1 pound fresh spicy sausage (casing removed)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup shredded cheese (Mac 'n Cheese blend)
  • 1/2 cup freshly shredded cheddar cheese
  • 4 sage leaves (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (191°C). Prepare a 9×13-inch casserole dish.
  2. Boil a large pot of water and cook the jumbo shells for about 7 minutes until al dente; transfer to an ice bath after draining.
  3. In a skillet over medium-high heat, brown the sausage while breaking it into pieces. Add broccolini and cook until softened, about 5 minutes.
  4. In the same skillet over medium-low heat, mix pumpkin puree, water, ricotta cheese, and nutmeg until bubbly. Stir in shredded cheeses and sage until smooth.
  5. Pour half a cup of sauce into the casserole dish. Combine remaining sauce with the cooled sausage mixture.
  6. Stuff each shell with the filling and place in the casserole dish. Pour remaining sauce over the top and sprinkle extra cheese.
  7. Bake for 15-20 minutes or until bubbly.
