  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Cajun seasoning
  • Fresh parsley for garnish

Instructions

  1. Boil pasta in salted water until al dente (9-10 minutes). Reserve ½ cup of pasta water, then drain.
  2. Season chicken pieces with Cajun seasoning, salt, and pepper.
  3. Heat olive oil and 1 tbsp butter in a skillet; sear chicken for 7-8 minutes until golden brown. Add half the minced garlic in the last minute.
  4. Remove chicken; lower heat and add remaining butter and garlic to the skillet. Sauté until fragrant.
  5. Stir in heavy cream and simmer to thicken (2-3 minutes).
  6. Mix in mozzarella and Parmesan cheeses until melted.
  7. Combine cooked rotini with sauce; adjust consistency with reserved pasta water if needed.
  8. Serve hot, garnished with parsley.
