  • 1 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • 1 tsp crushed fresh coriander seeds or 1 tbsp finely chopped fresh cilantro leaves

Instructions

  1. In a large skillet over medium heat, melt butter with vegetable oil. Add chopped onion; cook until translucent (5-7 minutes). Stir in garlic and ginger; sauté for an additional 2 minutes.
  2. Add chicken pieces; cook until browned on all sides (about 8-10 minutes).
  3. Sprinkle in spices; mix well to coat chicken. Cook for another minute.
  4. Pour in a splash of water or broth if needed and reduce heat to low. Cover and simmer for 15-20 minutes until chicken is cooked through.
  5. Just before serving, stir in fresh coriander seeds or chopped cilantro leaves.
