  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken or steak with chili powder, cumin, salt, and black pepper. Grill for 2-3 minutes per side until cooked through.
  3. In a mixing bowl, combine diced tomatoes, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Toss everything together until well mixed.
  4. In another small bowl, whisk together mayonnaise, chipotle pepper in adobo sauce, garlic, lime juice, salt, and black pepper until smooth.
  5. Divide the cooked rice among serving bowls. Top each bowl with grilled chicken or steak, a generous portion of pico de gallo, and sprinkle with chopped cilantro. Drizzle with chipotle aioli before serving.
