  • 2 tablespoons olive oil
  • 1 can (20 oz) pineapple chunks with juice
  • 0.5 cup brown sugar
  • 0.33 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • salt and pepper to taste
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. Season the chicken pieces with salt, pepper, and garlic powder.
  3. In a skillet, heat olive oil over medium-high heat and brown the chicken for about 4 minutes.
  4. In a mixing bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Transfer the browned chicken to the baking dish and pour the pineapple chunks with juice over it. Drizzle the glaze on top and stir gently.
  6. Cover with foil and bake for 25–30 minutes until cooked through (internal temperature of 165°F).
  7. Remove foil and bake uncovered for another 5–10 minutes to caramelize.
  8. Let rest for 5 minutes before serving; garnish if desired.
