  • 1/2 cup vegetable or canola oil
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 tsp red gel food coloring
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1 cup cream cheese, room temperature
  • 1 Tbsp vanilla extract
  • 1 tsp fine salt
  • 7 cups powdered sugar
  • 3 Tbsp heavy whipping cream, room temperature
  • 1/2 cup seedless raspberry or strawberry jam
  • 3 Tbsp water
  • Optional: 1/4 tsp red gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and grease round baking pans.
  2. In a bowl, whisk together cake flour, cocoa powder, baking soda, and salt.
  3. Cream butter and sugar until fluffy; add eggs one at a time along with buttermilk, oil, vanilla, vinegar, and food coloring.
  4. Gradually mix in dry ingredients until combined. Pour into prepared pans and bake for about 27 minutes.
  5. Cool layers before preparing the buttercream by mixing softened butter and cream cheese; gradually add powdered sugar.
