  • 2/3 cup cold butter, cubed
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese, softened
  • ½ cup + 2 Tablespoons caster sugar
  • 2 Tablespoons corn starch
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 and 2/3 cups fresh blueberries
  • ½ cup powdered sugar
  • 23 teaspoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9-inch springform pan by lining it with parchment paper and spraying it with nonstick cooking spray.
  2. In a large bowl, mix flour, baking powder, salt, brown sugar, regular sugar, and lemon zest (if using).
  3. Incorporate cold butter until the mixture resembles crumbs.
  4. Stir in eggs and vanilla until combined.
  5. Press two-thirds of this mixture into the prepared pan to form the crust; refrigerate both crust and remaining crumbs.
  6. In another bowl, beat mascarpone, cream cheese, sugar, cornstarch, and vanilla until smooth; add eggs one at a time gently.
  7. Pour half of the filling into the crust; scatter blueberries on top and cover with remaining filling; sprinkle remaining crumbs.
  8. Bake for 65–75 minutes or until golden brown; cool before serving.
