Instructions

  1. Slice the zucchini into 1/8 inch thick rounds using a mandolin slicer or food processor.
  2. Layer the slices in a colander, sprinkling with 1/4 tsp salt, and let drain for one hour.
  3. Preheat the oven to 225°F and line two baking sheets with parchment paper.
  4. Pat the drained zucchini slices dry with a towel and arrange them on the baking sheets without overlapping.
  5. Lightly spray or brush with avocado oil and sprinkle with the smoked paprika, ground pepper, and remaining salt.
  6. Bake for 70 to 90 minutes until crispy, rotating sheets halfway through.
