  • 1 1/2 lbs. zucchini (about 3 medium), cut into wedges
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried herbs (thyme, oregano, basil, rosemary)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Kosher salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix Parmesan cheese with dried herbs, smoked paprika, garlic powder, salt, and pepper.
  3. Toss zucchini wedges in olive oil until coated. Roll each wedge in the Parmesan mixture until fully covered.
  4. Place on the prepared baking sheet and bake for about 15 minutes until crisp. Broil for an additional 2-3 minutes for golden perfection.
  5. Garnish with parsley and serve warm.
