  • 1/2 cup packed brown sugar
  • 1/4 tsp baking soda
  • 1 1/4 cups rolled oats
  • 3/4 cup flour
  • 1 cup apricot preserves

Instructions

  1. Preheat the oven to 350°F and grease an 8×8 or 9×9 baking dish.
  2. In a mixing bowl, blend softened butter, brown sugar, baking soda, rolled oats, and flour until crumbly.
  3. Press 2 cups of the oat mixture into the bottom of the prepared baking dish.
  4. Spread apricot preserves over the crust, leaving a small gap at the edges.
  5. Sprinkle remaining oat mixture on top evenly.
  6. Bake for 30-35 minutes until golden brown.
  7. Allow to cool before slicing into bars.
