  • For the crumble: ¾ cup all-purpose flour, ¼ cup packed light brown sugar, 2 Tablespoons granulated sugar, 1 teaspoon ground cinnamon (optional), 4 Tablespoons unsalted butter (melted)

Instructions

  1. Preheat oven to 400°F and prepare a muffin tin with liners.
  2. In a bowl, mix crumble ingredients until clumpy; set aside.
  3. In another bowl, whisk flour, baking powder, salt, and cinnamon.
  4. In a large bowl, cream together brown sugar, granulated sugar, and butter until fluffy. Incorporate eggs and vanilla.
  5. Gradually add dry ingredients and milk alternately until just combined. Fold in apples.
  6. Fill muffin cups three-quarters full and top generously with crumble mixture.
  7. Bake for about 20 minutes until golden brown and a toothpick comes out clean.
