1 lb ground chicken
1 egg
1 tb olive oil
1/2 of a yellow onion, diced
1/2 of a Granny Smith apple, peeled and diced
1 tsp soy sauce
2 oz cheddar cheese, freshly grated
1/2 c fine breadcrumbs
1/4 cup parsley, chopped
1/4 cup walnuts, finely diced
1 1-inch piece of ginger, grated
1 tsp salt
Freshly cracked black pepper and cayenne to taste
2 large or 3 medium sweet potatoes
2 Tb butter
2 Tb maple syrup
1/2 tsp each: cinnamon, coriander, cumin, and nutmeg
Salt and cayenne to taste
Instructions
Preheat the oven to 400°F (200°C). Bake sweet potatoes for 60-75 minutes until tender.
In a small sauté pan, heat 1 tablespoon of olive oil over medium heat. Add diced onion and apple along with a pinch of salt. Sauté for about 5-7 minutes until softened. Deglaze with soy sauce and remove from heat to cool.
Prepare a baking sheet by lightly greasing it with olive oil.
In a large mixing bowl, add ground chicken, egg, breadcrumbs, grated cheese, parsley, walnuts, grated ginger, salt, pepper, cayenne, and the cooled onion/apple mixture. Use your hands to mix everything together until well combined.
Form the mixture into approximately 2-inch balls and place them on the prepared baking sheet. Bake in the preheated oven for about 15 minutes or until fully cooked through.
Once sweet potatoes are cooked, peel them and place the flesh in a bowl. Add butter, maple syrup, cinnamon, coriander, cumin, nutmeg, salt, and cayenne. Mash everything together using a fork until smooth.
